I'm afraid editing hosted org mailbox plans is currently not working properly you can delete / create hosted organization mailbox plans and Global plans can be edited.
Moving several users can be done using the "maintenance" drop down, where you select the original plan and the target plan this will move all users (globally or for a specific hosted org is possible) from 1 plan to another.
Mailbox features can only be enabled/ disabled on mailbox plan level.
