Q.  If I remove the server component how does that affect the existing configuration (i.e. Do I have to re-configure IIS, MySQL etc. unders Servers -> Portal.  Or when i re-install the Server component do i just set the same password and it will all still be there?

2. My question in the last comment, just make sure the Server password is the same and no need to reconfigure everything (or of course change the password in the CP).

I will test on my other servers and report back if i have any issues.
