You can set the Exchange template via: Serveradmin home --> Mail Templates (bottom right) --> Hosted Exchange Setup template or something like it.

For the ID: If you use hosted organization auto provisioning it uses the domain.com for name and ID to keep things clear.

You can only set it custom if you manually create an organization (it can be convenient for importing existing orgs to SolidCP for example).
