@Marco, I've seen this "*:80" binding get translated into an ip address of 0:0:0:0 issue elsewhere, and since you mention it being solved probably fixes it in both places.  :fingers-crossed:

Hi All is there setup documentation I can follow in order to configure lets encrypt with SolidCP?

There's no configuration needed for LetsEncrypt.
In IIS 8 and up you probably do want to enable SNI.
IIS 7.5 and below you have to use dedicated IP's for Certification options (as they don't support SNI).
